- Cook the spaghetti according to package directions, drain and set aside, reserving two cups of the pasta water
- In a medium bowl, whisk the egg yolks together until smooth
- Add the grated cheeses and season with the fresh ground pepper
- Heat the oil in a saute pan over medium heat
- Add the pancetta and cook until golden brown and crispy, approximately 5 minutes
- Slowly whisk 1/4 cup of the pasta water into the cheese and egg mixture
- Add the pasta to the pan with the pancetta and toss
- Add the egg mixture, tossing continuously until the pasta is well coated
- Add additional reserved pasta water to reach a creamy consistency
- Serve immediately with fresh cracked pepper
