- Combine pickles, banana pepper and juices in mixing bowl
- Add cheese batons and cover with water
- Refrigerate for minimum 4 hours or up to 24 hours
- Remove cheese from brine and pat dry
- Whisk buttermilk with hot sauce and beaten egg in shallow container
- In another shallow container, combine flour, pinch of paprika and pinch of cayenne
- Heat oil in deep fryer to 350⁰F
- Dredge cheese pieces in flour, then buttermilk mixture, then again in seasoned flour
- Fry cheese approximately 3 minutes or until golden brown
- Remove and drain on wire rack or paper towels
- Meanwhile, combine remaining paprika and cayenne, brown sugar, red pepper flakes, garlic powder and cumin in mixing bowl
- Scoop approximately 1 - 2 ounces hot fryer oil into bowl and whisk to combine spices
- Brush the spicy oil over fried cheese and place inside warmed pita pocket
- Mix cole slaw blend with mayonnaise, granulated sugar, vinegar, salt and pepper
- Serve pita pocket topped with cole slaw, pickle chips and banana peppers
